Weeknight Balsamic Oven Leg Quarters


  • 4-6 Leg Quarters
  • Adobo All purpose seasoning
  • Ground Black pepper
  • Garlic powder
  • Onion powder
  • Paprika
  • Oregano
  • Parsley
  • 2 tablespoon balsamic vinegar
  • 3 tablespoon chicken broth (low sodium)
  • 3 tablespoon red bell pepper, finely diced
  • 2 tablespoon green onion , finely chopped


  1. Preheat oven to 350 degrees
  2. In a deep pan, season both sides of the chicken with adobo, Black pepper, garlic powder, onion powder, paprika, oregano, and parsley
  3. Pour balsamic vinegar over the chicken
  4. Pour chicken broth into the pan
  5. Sprinkle chicken with bell pepper and green onion
  6. Place chicken in the oven and bake for 1 hour 30 minutes(baste chicken every 15 minutes )
  7. Remove from oven and let chicken rest for 5 minutes
  8. Serve and enjoy!

  1. I made this last night but I had to use chicken thighs…my daughter loved it and she is a picky eater..it was scrumptious!
