Summer is here and y’all – it’s hotter than anything here in Texas!
This recipe is a twist on classic pasta salad , which is made normally made with Italian dressing, but I mixed it with a mayonnaise because I live a creamy pasta salad .
Feel free to add extra veggies or remove any that you aren’t find of.
I would serve this with bbq chicken and baked beans (both items are on the blog )

Serves 6-8
Ingredients
12-16 ounces garden rotini pasta
1/2 medium red onion , minced
1 cucumber, diced
1/2 pint grape tomatoes , halved
1 medium yellow bell pepper , diced
3 tablespoon Italian vinaigrette dressing (I used wishbone hosue Italian )
1 cup mayonnaise
1 + 1/4 teaspoon Cajun seasoning (I used old bay )
1/8 teaspoon ground black pepper
1/2 teaspoon white sugar
Instructions
1. Cook noodles according to the packing – al dente style
2.Drain pasta and rinse with cold water
3. In a large bowl , add mayonnaise, Italian dressing , Cajun seasoning, black pepper , and sugar – mix well
4. Add remainder of ingredients and mix well
5.Chill for 1-3 hours
6. Serve and enjoy !
