Breakfast potatoes are really the all star of a nice breakfast or brunch plate. When they are roasted and seasoned properly, they taste amazing and really compliment eggs and whatever meat you are having. This recipe combines red potatoes , bell peppers, and 3 seasonings to create the perfect side for your next family breakfast or brunch at home. The recipe is simple and is versatile because this can also be served as a side for dinner or meal preps ! Gone are the days when you would have to go out for breakfast or brunch to get a great meal, you can truly create the same if not better at home. Ingredients

◦ 2 pound red potatoes , cut into 1 inch chunks

◦ 1 /2 red bell pepper, cut into small chunks

◦ 1/2 orange bell pepper , cut into small chunks

◦ 2 tablespoon extra virgin olive oil

◦ 1/2 tablespoon garlic, minced

◦ 1 teaspoon adobo

◦ 1/4 teaspoon garlic powder

◦ 1 teaspoon chili powder

◦ 1/2 tablespoon fresh parsley

Instructions

1. Preheat oven to 400 degrees

2. In a large bowl add potatoes , olive oil, adobo, garlic powder , minced garlic , and chili powder

3. Combine until the potatoes are well coated

4. Lay the potatoes flat on a baking sheet

5. Add the chopped red and orange bell peppers

6. Cook for 1 hour , shift at least 2-3 times during the cook time to make sure it’s browned evenly

7. Remove from heat

8. Sprinkle parsley and serve !
