Ingredients
  

  • 2 pound Red potatoes , cut into 1 inch chunks
  • ½ Red bell pepper, cut into small chunks
  • ½ Orange bell pepper , cut into small chunks
  • 2 tablespoons Extra virgin olive oil
  • ½ tablespoon Garlic, minced
  • 1 teaspoon Adobo
  • ¼ teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • ½ tablespoon Fresh parsley

Method
 

  1. Preheat oven to 400 degrees
  2. In a large bowl add potatoes , olive oil, adobo, garlic powder , minced garlic , and chili powder
  3. Combine until the potatoes are well coated
  4. Lay the potatoes flat on a baking sheet
  5. Add the chopped red and orange bell peppers
  6. Cook for 1 hour , shift at least 2-3 times during the cook time to make sure it’s browned evenly
  7. Remove from heat
  8. Sprinkle parsley and serve !
