4 pounds chicken (legs and thighs)

Adobo all purpose seasoning

Badia complete seasoning

Garlic powder

Paprika

Ground ginger

Thyme

Extra virgin olive oil

Wet jerk seasoning (Walkerswood mild )

Dry jerk seasoning (I used Caribbean rhythm jerk seasoning )

Jamaican browning (I used the Grace brand)

2 tablespoon green seasoning (optional)

Red bell pepper

Orange or green bell pepper

Green onion

BBQ sauce (I used Sweet Baby rays)

Dark brown sugar

In a large, deep bowl add – all purpose, complete seasoning , garlic powder,paprika, ginger, thyme, olive oil,wet jerk seasoning, dry jerk seasoning, browning, green seasoning (optional) , red bell pepper, orange or green bell pepper, and green onion
Mix well until all of the chicken pieces are evenly coated with the seasoning (optional : marinate for 4-24 hours)
Add the seasoned chicken to a large, deep baking dish.

In a small bowl combine the bbq sauce and brown sugar (optional)
Spoon the bbq sauce over the chicken. Bake at 375for 1 hour 10 minutes to 1 hour 20 minutes uncovered (or until the internal temperature reaches 165 degrees)
Baste chicken every 20 minutes during the cook time
Remove from oven and baste a final time, serve, and enjoy !

2 tablespoon wet jerk seasoning (Walkerswood mild )

1 tablespoon dry jerk seasoning (I used Caribbean rhythm jerk seasoning )

1 teaspoon Jamaican browning (I used the Grace brand)

2 tablespoon green seasoning (optional)

1/2 red bell pepper

1/2 orange or green bell pepper

2 sprigs green onion

1 + 1/2 cup bbq sauce (I used Sweet Baby Ray’s)

Instructions

1.Preheat oven to 375 degrees.

2.Add chicken to a large deep bowl.

3.Add all purpose, complete seasoning , garlic powder,paprika, ginger, thyme, olive oil,wet jerk seasoning, dry jerk seasoning, browning, green seasoning (optional) , red bell pepper, orange or green bell pepper, and green onion.
