I don’t recall if I first saw my mother or a relative use salad dressing while cooking meat as a child but I do know that I took that cooking tip / trick with me well into my adulthood. Cooking with oil based salad dressing is a game changer. It acts as a quick , no fuss marinade and really takes the flavor up on your meats.

This recipe is for my Italian dressing chicken thighs and potatoes – and it is absolutely delicious!

My favorite Italian dressings come from Ken’s Steakhouse and Wish Bone, but feel free to use your favorite brand of Italian dressing.

Combine your chicken thighs and potatoes in a deep oven safe baking dish
Bake at 375 degrees for 60-70 minutes (make sure you baste your chicken every 20-30 minutes)

Italian Dressing Chicken Thighs + potatoes Recipe

Ingredients

6 chicken thighs

1 + 1/2 tsp adobo all purpose seasoning

1/8 ground black pepper

2 teaspoon Badia complete seasoning

1 tsp onion powder

1 teaspoon garlic powder

1 tsp paprika

1 tbsp garlic paste

1 pound baby potatoes

3 tablespoons Italian dressing I used WishBone Italian dressing

fresh parsley, optional garnish

Instructions

1.Preheat oven to 375 degrees

2.Season chicken thigh’s with 1 teaspoon Glam Kitchen all purpose, ground black pepper , 1 teaspoon Badia complete, onion powder, garlic powder , 1/2 teaspoon paprika, garlic paste, and 2 tablespoon Italian dressing – mix well and set aside

3.Cut the baby potatoes into 2-3 pieces depending on the size. Season the potatoes with 1/2 teaspoon Glam Kitchen all purpose seasoning, 1/2 teaspoon paprika , 1 teaspoon Badia complete , and 1 tablespoon Italian dressing-mix well and set aside

4.Arrange potatoes around chicken in a large, deep oven safe baking dish

5.Bake for 60-70 minutes (baste your chicken every 20-30 minutes)

6.Test the potatoes with a knife- it should go through the potato easily, that is how you will know if they are fully cooked

7.Remove from oven, baste the chicken a final time and garnish with parsley

8.Serve and enjoy !
