There is nothing like a plate or bowl of creamy seafood pasta. It’s one of my favorite meals and I love ordering it when I go to my favorite restaurants. One of my mottos for this year is “We aren’t eating out as much in 2020, we have lit food at home”. It is so easy to get wrapped up into dining out every week but the benefits of cooking at home are you will spend less and you know what ingredients are truly in your food. This creamy salmon pasta combines perfectly seared salmon, linguine pasta, and a tasty cream sauce. In about 1 hour (prep and cook time included) you will have a plate of delicious salmon pasta! Glam Kitchen Tips

  • Use fresh garlic and parsley
  • If you want a nice sear, make sure the salmon is room temperature and dried before seasoning it. A piece of salmon that has a lot of moisture will make it steam and not sear
  • I use lime juice and cold water to clean my fish , after I drain it I use a paper towel to pat it dry if needed

Ingredients

  • 2 large pieces of salmon (6-8 ounces each)
  • Old bay
  • Lemon pepper
  • Pink Himalayan salt
  • Ground black pepper
  • 8 ounces linguine pasta noodles (1/2 the box)
  • 2 tablespoon extra virgin olive oil
  • 1.5 cup heavy cream
  • 1 cup low sodium chicken broth
  • 2 tablespoon unsalted butter
  • 10 grape tomatoes (cut in halves )
  • 2 tablespoon red onion, minced
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh parsley , chopped
  • 3 tablespoon Parmesan cheese, shredded
  • Optional- extra Parmesan cheese and fresh parsley to garnish

Instructions

1. In a large pot of salted water , cook the linguine noodles according to the packaging-then drain and set aside

2. Season both sides of the salmon filets with old bay and lemon pepper seasoning

3. Heat the olive oil in a skillet on medium high heat until hot (the key to a good sear is the oil being hot)

4. Cook the salmon skin side up first for about 4-5 minutes each side or until salmon reaches level of desired doneness

5. Remove from heat and set aside

6. In a large skillet , melt butter and sauté the onion and garlic for about 2-3 minutes or until tender

7. Pour in heavy cream and chicken broth and stir well

8. Bring it to a boil and stir continuously for 4-5 minutes

9. Reduce the heat to medium low and season with salt and pepper to taste

10. Stir in the Parmesan cheese and parsley and mix well-allow it to cook for 4-5 minutes

11. Add the tomatoes and allow it to cook for another 4-5 minutes

12. Add the linguine noodles and toss in the pasta sauce

13. Remove from heat, serve, and enjoy !
