Ingredients
  

  • 4 Roma tomatoes diced
  • 1 tablespoon extra virgin olive oil
  • 1 stick of unsalted butter
  • 2 tablespoons garlic
  • 3 sprigs green onion (scallion)
  • 1 pint heavy cream
  • 8 ounces fresh parmesan cheese
  • kosher salt
  • ground black pepper
  • garlic powder
  • thyme

Method
 

  1.  In a heated skillet, add the butter and garlic and let it cook for 2-3 minutes or until the butter melts
  2.  Add tomatoes and green onion and sauté on high heat for 3-5 minutes or until the vegetables are tender
  3. Reduce the heat and pour the cream into the skillet and stir-allowing it to simmer for 2-3 minutes
  4. Season the sauce with salt, pepper, thyme, and garlic powder to your preferred taste
  5. Stir in the Parmesan cheese and allow the sauce to simmer for 7-10 minutes on low heat until it thickens
  6. Remove from heat and serve !
