Ingredients
  

  • 3 pound Sweet potatoes , peeled and cut into 1/2 inch slices
  • ½ cup Dark brown sugar
  • ½ cup White sugar
  • 1 teaspoon Ground ginger
  • ¼ teaspoon Cinnamon
  • ¼ teaspoon Nutmeg
  • 1 Stick salted butter
  • cup Pineapple juice

Method
 

  1. Preheat oven to 375 degrees
  2. Boil a large deep pot of water
  3. Add sweet potatoes and boil for 10-12 minutes
  4. Remove from heat and drain sweet potatoes , then set aside
  5. In a large deep skillet melt butter
  6. Add brown sugar, white sugar , ginger, cinnamon, nutmeg, and pineapple juice
  7. Stir well and allow it to simmer for 5 minutes while stirring
  8. Remove from heat
  9. In a deep baking dish , spray non stick spray and add sweet potatoes
  10. Pour pineapple ginger mixture over sweet potatoes
  11. Bake for 45 minutes , basting the potatoes every 10-15 minutes in the sauce
  12. Remove from heat
  13. Serve and enjoy !
