Slow Cooker Mojo Pork

Growing up in south Florida , there was never a shortage of delicious food from all cultures. I fell in love with Cuban food as a child. The flavors made my tastebuds do a whole song and dance. The seasonings they used for pork and chicken were just absolutely delicious to me, and mojo pork will always be one of my favorite Cuban dishes. I wanted to bring this dish to your kitchen , in a simplified way. This dish uses a slow cooker so that you can set it and forget it , yet is still rich in flavor. Pair this with black beans and rice and salad , and voila dinner is served.

Ingredients

◦ 4-5 pound pork butt or pork shoulder

◦ Adobo seasoning

◦ Badia complete seasoning

◦ Ground black pepper

◦ Onion powder

◦ Chili powder

◦ Paprika

◦ 3/4 cup mojo marinade

◦ 1 tablespoon lime juice

◦ 1 tablespoon garlic, chopped

◦ 1 large onion , sliced

Instructions

1. Generously season both sides of the pork with adobo, complete seasoning , black pepper , onion powder , chili powder , and paprika

2 . Turn the slow cooker on to the high setting

3. Place the pork inside the slow cooker

4. Add garlic , Mojo marinade , and pour lime juice over the pork

5. Allow the pork to cook for 6 hours on high in the slow cooker (cook it for 8 -10 hours if using the low setting)

6. Remove the pork from the slow cooker and using 2 forks, shred the pork

7. Place the shredded pork in a pan (spoon about 2 tablespoon of the slow cookers juices over the pork )and broil for 10 minutes

8. Remove from the oven and set aside

9. In a large skillet , using 1 cup of the juices from the slow cooker and the onion -saute the onions for about 5 minutes on high heat

10. Top the pork with sautéed onions , serve and enjoy !
