Honey BBQ Meatloaf

Meatloaf is a classic comfort food that can be yummy and very inexpensive to make. Pair this recipe with my Creamy + Dreamy Steakhouse Mashed Potatoes recipe and a green vegetable and you will have a delicious dinner for your household. As always, enjoy the recipe and let me know what you think!

*Meatloaf *

Ingredients

◦ 2 pounds ground beef

◦ 1 cup plain breadcrumbs

◦ 2 tablespoon red onions, finely diced

◦ 2 tablespoon green bell pepper, finely diced

◦ 2 medium eggs, beaten

◦ 2 tablespoon Dijon mustard

◦ 2 tablespoon Worcestershire sauce

◦ 1 + 1/4 teaspoon Seasoning Salt (I prefer Lawry’s)

◦ 3/4 teaspoon Garlic powder

◦ 3/4 teaspoon Onion powder

◦ 1/8 teaspoon Black pepper

◦ 1 tablespoon Parsley

◦ 2 tablespoon minced garlic

Honey BBQ Meatloaf sauce

◦ 1 cup your favorite barbecue sauce ( I used Sweet Baby Rays)

◦ 1/2 cup honey

◦ 2 tablespoons ketchup

Instructions

  1. Preheat oven to 350 degrees
  2. Add all ingredients in a large bowl. Mix them well to combine
  3. Form meat into a loaf and place in a oven safe pan that is greased (use a non stick spray to do so)
  4. For the sauce-Combine bbq sauce , ketchup, and honey in a small bowl then set aside
  5. Spoon the sauce over the meatloaf until it is covered -reserving at least half of the sauce to use for a second coating
  6. Place meatloaf in oven and bake for 35 minutes
  7. Remove from oven and spoon more sauce over the meatloaf-enough to cover it
  8. Place the meatloaf back in the oven and bake for another 30-35 minutes
  9. Remove from oven and let it sit for 5-10 minutes before slicing
  10. Serve and enjoy!
