Rotel Cheese Dip with ground beef and sausage recipe

It’s time that we get you ready for football parties, baby showers, and any other events with a bomb appetizer recipe. My recipe for Rotel cheese dip with ground beef and sausage is tasty, full of flavor, and pretty easy to put together.

Now -this isn’t your generic, run of the meal Rotel dip recipe. Chile; this Rotel recipe has some soul.

This is my version of the classic Rotel dip, which usually includes Velveeta cheese, a can of Rotel, and ground beef as the 3 ingredients. I decided to give it a bit more flavor by adding seasonings, sausage, bell pepper, onion, and an additional cheese to take it to the next level. There is a million ways to make this – but this is how I make mine.

Ground beef (80/20 lean)

Ground breakfast sausage

Onion

Green bell pepper

Adobo all purpose seasoning

Badia complete seasoning

Chili powder

Garlic powder

Rotel

Velveeta cheese product

Colby & Monterrey Jack cheese

1 + 1/2 cup heavy cream

Jalapeño (optional garnish)

Cilantro (optional garnish)

Roma tomato (optional garnish)

In a large deep pot, add the ground beef, ground sausage, onion, and bell pepper. Season with all purpose seasoning, complete seasoning, chili powder, and garlic powder- mix well until the meat is browned and fully cooked (drain the excess oil)

Add the Rotel, Velveeta, and Colby & Monterey jack cheeses to the pot. Heat and stir on medium until the cheese is fully melted
Add the heavy cream and stir well until it is fully incorporated into the cheese dip. Allow this to simmer on medium low for an additional 8-10 minutes while stirring (optional-stir in extra chopped cilantro)

Transfer to a serving dish and top with optional garnishes (Jalapeño , cilantro, and Roma tomatoes)

6.Serve with tortilla chips and enjoy!
