One meal that I think is very underrated is air fryer chicken skewers. Chile, when I tell you that my latest recipe for Greek inspired chicken skewers in the air fryer will have you making these often, I mean it.
This recipe combines diced chicken , seasonings, and Greek vinaigrette dressing to make for a clean but tasty meal idea that is ready in 30 minutes.
Now, you could make a Greek vinaigrette from scratch for this recipe, but chile this recipe is meant to be a quicker way to get the job done. If you prefer homemade dressings, feel free to make it and substitute it in the recipe.
Currently I am eating a high protein diet so this recipe checks all the boxes for my weeknight dinners (I want my meals quick, protein packed, and tasty during the week). I served these Greek chicken skewers with a side Greek salad, and to me it was the perfect side (feel free to choose whatever sides you prefer though).

2 pounds boneless skinless chicken thighs or chicken breast
All purpose seasoning
Badia complete seasoning
Garlic powder
Paprika
Oregano
Thyme
Greek vinaigrette dressing (I used the Kraft brand)
lemon
Fresh parsley (optional garnish)
Serves 2-4
Ingredients
2 pounds boneless skinless chicken thighs or chicken breast, cut into chunks
3/4 teaspoon adobo all purpose
1 teaspoon Badia complete seasoning
1 + 1/2 teaspoon garlic powder
1 + 1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 cup Greek vinaigrette dressing
1/2 lemon
Fresh parsley (optional garnish)
Instructions
1.Soak wooden skewers in water for 30 minutes (this prevents them from burning in the air fryer)
2.Season diced chicken with all purpose seasoning, complete seasoning, garlic powder, paprika, oregano, thyme, and add Greek vinaigrette dressing
3.Mix well so that the diced chicken is evenly coated with the seasoning
4.Add the seasoned diced chicken to the skewers (I used shorter skewers so that they would fit in my air fryer)
5.Spray your air fryer with non stick spray (optional) and air fry the chicken kabobs at 400 degrees for 18-20 minutes, make sure you flip them after 10 minutes (The internal temperature must be 165 degrees to ensure that it is fully cooked)
6.Remove the chicken skewers from the air fryer, squeeze lemon juice over them, and garnish with fresh parsley (optional)
7.Serve and enjoy!
