Cooking a whole fish at home can be kind of intimidating for many, however I promise it is not as hard as it seems. Personally , I have no idea how to scale and clean a whole fish but the great thing about most local meat markets is , they will do the work for you ! I used red snapper for this recipe however , you can substitute it with other white fish as needed. When you go to purchase your fish, make sure you are paying attention to the eyes of the fish -usually if it’s cloudy it’s not as fresh. After you select one then ask them to “scale and gut” your fish for you . My local market also trims the fins and tails for me, usually they already are aware of what needs to be done or they will ask you as they go. I’ve noticed also at various meat and seafood markets that in the fish area, they have a picture with numbers explaining how you can order your fish to be cleaned, so be on the lookout for that also. Instead of saying all of what I wrote , you may be able to say “#5 please”. Once you get your fish home, you are going to clean it with cold water and lime juice . Then, drain the fish and pat them dry. Voila! You are now ready to season and oven bake it ! This recipe pairs mojo marinade with seasonings and fresh veggies. I served it with yellow rice and black beans and it was delicious! Serving it with a side salad would also be a very good side choice as well. - If you do not have access to Badia Complete seasoning , use pink Himalayan Salt instead

- 2 red snapper whole fish, cleaned with 2-3 slits cut on the side
- Badia complete seasoning
- Black pepper
- Garlic powder
- 4 tablespoon badia mojo marinade
- 1 tablespoon orange juice
- 1/2 tablespoon olive oil
- 1/2 tablespoon Thyme
- 1 large lime, sliced
- 2 sprigs green onion, chopped
- 1/2 yellow bell pepper, sliced
- 2 cloves garlic, chopped
- Fresh parsley (optional garnish)
Instructions
1. Preheat oven to 400 degrees
2. Generously season both sides of the fish with complete seasoning , black pepper, and garlic powder
3. Spray a large baking dish or pan with non stick spray
4. Lay the fish in the baking dish
5. Stuff the inside of the fish with 1/2 of the garlic, lime slices, green onion, and yellow bell pepper-arrange the rest of the items around the fish
6. In a small bowl, whisk together mojo marinade, oil, and orange juice
7. Drizzle mojo mixture over seasoned fish
8. Garnish thyme over the fish
9. Bake fish in the oven for 25-40 minutes depending on the size of your fish (the larger the fish, the longer your cook time)
10. Remove from the oven and serve !

Oven Mojo Snapper
Ingredients
