It is a new month and time for a new recipe. Moving to Texas has truly made me fall in love with Tex Mex food. I probably have tacos at least once a week now, which is way more than I’ve eaten them in my lifetime of being a foodie. This recipe combines well seasoned shrimp with onions and multi colored bell peppers. Serve these with warm tortillas and my Cilantro Jalapeño Ranch Sauce and whew Chile, you are going to have an amazing meal.
Glam Kitchen Tips
- Fresh cilantro and lime make a difference, so make sure you use them
- If you want the authentic Mexican restaurant feel, make this in a cast iron skillet
Ingredients
◦ 1.5 pound large shrimp , peeled , deveined with tails removed
◦ 1 medium red bell pepper, chopped
◦ 1 medium orange or yellow bell pepper, chopped
◦ 1 medium red onion , chopped
◦ Adobo
◦ Black pepper
◦ Chili powder
◦ Garlic powder
◦ Cumin
◦ 2 tablespoon vegetable oil
◦ 1 teaspoon garlic
◦ 1 teaspoon lime juice
◦ 1 tablespoon fresh cilantro
◦ Slices of lime (optional garnish)
Instructions
- In a large bowl, season shrimp with Adobo, black pepper, chili powder, garlic powder , and cumin and mix until all shrimp are coated with seasoning
- Add the fresh cilantro and lime juice, mix well, and set aside
- Heat oil in a large heavy bottom skillet and Saute garlic , onion, and bell peppers for about 5 minutes or until they are tender -push to one side of the skillet
- Add shrimp and cook on each side for 2-3 minutes
- Stir the shrimp and veggies together and cook for another 2-3 minutes and remove from heat
- Serve with warm tortillas and your choice of toppings

Shrimp Fajitas
Ingredients
