Simple Strawberry Lemonade Cupcakes #AD

The recipe this week is in honor of today being the first day of Spring. These Strawberry Lemonade cupcakes have a strawberry cake with real strawberries in them and a lemon cream cheese frosting, As the weather gets warmer and family gatherings quickly approach us, I wanted to leave you with a blog first, which is a baking recipe! I also wanted to share something quick and delicious that would wow everyone presentation wise. These cupcakes remix traditional box cake and make them taste delicious. Glam Kitchen Tips

  • Beat your eggs before adding them to the cake mix

Makes about 12-24 cupcakes

Ingredients

  • 1 box of Betty Crocker Super Moist Strawberry cake mix
  • 1 cup whole milk
  • 1/2 cup Clover Valley Vegetable Oil
  • 4 eggs, beaten
  • 1 pound fresh strawberries
  • 1 (16 ounce) Betty Crocker cream cheese frosting
  • 2 large lemons
  • Cupcake liners
  • 1 cupcake pan
  • 1 pack of Smart + Simple Straws

Instructions

  1. Preheat oven to 350 degrees
  2. Finely dice 1/2 pound of the strawberries and set aside
  3. In a large bowl, combine cake mix, strawberries, eggs, milk, and oil-stir vigorously by hand or use a mixer for 2 minutes
  4. Bake cupcakes for 12-17 minutes until done , use a toothpick to test doneness
  5. Remove cupcakes from oven and allow them to cool completely
  6. In a large bowl, empty carton of cream cheese frosting
  7. Add 2 tablespoon of fresh lemon juice from 1 of the lemons
  8. Mix well and ice cupcakes when they are completely cool
  9. Slice up remaining strawberries and lemon and arrange them on the cupcakes
  10. Cut a few straws into 3 pieces and stick them in the cupcakes
  11. Serve and enjoy!
