Chicken thighs are probably the most slept on part of the chicken. Although I love white meat, there is nothing better than dark meat pieces when they are seasoned well and oven baked. Dark meat is generally cheaper , but that doesn’t mean it has to taste basic. This recipe was honestly just something I tried for one of my weekly meal preps after having a pack of chicken thighs in the freezer and some peppers in my fridge . I thought to myself how could I jazz this up so it’s yummy, and boom Fajita Style chicken thighs were born. This recipe is tasty, full of flavor, and very easy to make. Use it for for meal preps, a weeknight meat, or as a way to jazz up that pack of chicken thighs you’ve had in your freezer. Glam Kitchen Tips
- Fresh lime is best for this recipe but if you have the bottled lime juice it’s fine to use that also
- Generally 1 Lime should give you about 2 tablespoon of lime juice
- Make sure you are trimming the fat and cleaning your chicken before you cook it(I use cold water and vinegar or lime juice to clean mine)
Ingredients
- 6-8 chicken thighs
- Pink Himalayan Salt
- Ground Black Pepper
- Paprika
- Garlic powder
- Onion powder
- Chilli powder
- Cumin
- Oregano
- Parsley
- 2 tablespoon lime juice
- 2 tablespoon olive oil
- 1 tablespoon minced garlic
- 3 multi colored bell peppers, sliced (I used red, orange, and yellow but choose any 3 colors)
- Optional: 1 extra lime to squeeze more juice over the chicken when it is done cooking
Directions
1. Preheat oven to 350 degrees
2. Season both sides of the chicken with salt, pepper, paprika, garlic powder, onion powder, Chilli powder, cumin , oregano, and parsley
3. Squeeze the lime juice over the chicken and then drizzle the olive oil over the chicken , mix chicken so that all pieces are evenly coated
4. Arrange seasoned chicken and peppers in a baking dish and bake for 1 hour and 30 minutes (baste chicken every 20 minutes to make sure chicken remains juicy)
4. Remove from oven at end of cook time and squeeze more lime juice over chicken (optional)
5. Serve and enjoy!

No covering necessary , just make sure you are basting the chicken (pouring the juices over it every 20 minutes to keep it juicy)
how much of each seasoning do you use roundabout? like a tbsp or tsp?
Hi, I don’t measure it depends on the amount of meat your using …I would say closer to a teaspoon since I season both sides of the meat
