Ingredients
- 2 pound raw medium size shrimp (peeled and deveined with tail left on)
- 2 tablespoons extra virgin olive oil
- 4 sprigs of fresh thyme
- 2 tablespoons minced garlic
- 2 1/2 tablespoons Jamaican curry powder
- 1/2 cup of coconut milk
- 1/2 cup of water
- 1/2 medium size red bell pepper sliced
- 1 carrot chopped
- 1/2 medium size green bell pepper sliced
- 3 sprigs of green onion (scallion) chopped
- kosher salt
- ground black pepper
- garlic powder
Instructions
- In a bowl, add shrimp and season with curry powder, salt, pepper, thyme and garlic powder-set aside
- In a heated skillet, add olive oil and garlic and cook for 1-2 minutes on medium high heat
- Add the red pepper, green pepper, carrots and scallion to the skillet and sautee for 5-7 minutes
- Add the shrimp , water , and coconut milk then let it cook on high heat for 5-7 minutes while stirring continuously
- Season with more salt and pepper if needed
- Remove from heat and serve!
