  • 2 pound raw medium size shrimp (peeled and deveined with tail left on)
  • 2 tablespoons extra virgin olive oil
  • 4 sprigs of fresh thyme
  • 2 tablespoons minced garlic
  • 2 1/2 tablespoons Jamaican curry powder
  • 1/2 cup of coconut milk
  • 1/2 cup of water
  • 1/2 medium size red bell pepper sliced
  • 1 carrot chopped
  • 1/2 medium size green bell pepper sliced
  • 3 sprigs of green onion (scallion) chopped
  • kosher salt
  • ground black pepper
  • garlic powder


  1. In a bowl, add shrimp and season with curry powder, salt, pepper, thyme and garlic powder-set aside
  2. In a heated skillet, add olive oil and garlic and cook for 1-2 minutes on medium high heat
  3. Add the red pepper, green pepper, carrots and scallion to the skillet and sautee for 5-7 minutes
  4. Add the shrimp , water , and coconut milk then let it cook on high heat for 5-7 minutes while stirring continuously
  5. Season with more salt and pepper if needed
  6. Remove from heat and serve!
